Recipe: Mediterranean Roast Greek Lamb with Zoë Rosemary
Ingredients (serves 4–6):
- 2–3 lbs leg of lamb or shoulder
- 3 tbsp Zoë Extra Virgin Olive Oil
- 2 tsp Zoë Greek Dried Rosemary
- 4 garlic cloves, minced
- Juice of 1 lemon + zest
- 1 tsp sea salt
- ½ tsp black pepper
- 1 tsp dried oregano (optional)
- 1 cup baby potatoes, halved
- 1 cup carrots, chopped
- Fresh parsley for garnish
Instructions:
- Preheat oven to 180°C (350°F).
- In a small bowl, mix olive oil, Zoë Greek Dried Rosemary, garlic, lemon juice and zest, salt, pepper, and optional oregano.
- Rub the mixture generously over the lamb.
- Place the lamb in a roasting pan and arrange potatoes and carrots around it.
- Roast for 1.5–2 hours, basting occasionally, until the lamb is golden and cooked to your preferred doneness.
- Let the lamb rest 10 minutes before slicing. Garnish with fresh parsley and drizzle with pan juices or extra olive oil.
Serving Suggestion: Serve with roasted Mediterranean vegetables, a Greek salad, or warm crusty bread for a full traditional experience.
