There is nothing like having one of these biscotti cookies with a warm cup of coffee after a delicious holiday meal. They are simple to make, have a decadent chocolate flavour, and a nice crunch from the pistachios.<\/p><p>Pr\u00e9paration: <strong>20 minutes<br \/><\/strong>Temps de cuisson : <strong>25 minutes<\/strong><br \/><span class=\"title\">Ingr\u00e9dients: <strong>13<\/strong><\/span><b><br \/><\/b>Portions : <strong>36<\/strong><\/p><\/div><\/div><div>\u00a0<\/div><h3>Ingr\u00e9dients<\/h3><ul class=\"ingredients\"><li><strong>Ground flaxseeds<\/strong>. This will be used to make our vegan flax \u2018egg\u2019. It\u2019s optional but highly recommended!<\/li><li><strong>Almond<\/strong> <strong>Milk<\/strong>. Or any plant milk of your choice.<\/li><li><strong>Huile d'olive<\/strong>. I\u2019ve only used olive oil in this recipe, and the olive oil is what helps keeps these cookies soft and chewy.<\/li><li><strong>Ground Espresso<\/strong>. This helps to enhance the chocolate flavour of these pistachio biscotti.<\/li><li><strong>Poudre de cacao<\/strong>. To make these biscotti chocolate flavoured!<\/li><li><strong>All-Purpose Flour<\/strong>. Make sure to use the spoon-and-level method to measure the flour so the biscotti cookies stay soft and fluffy. Packing the flour will make these biscotti too crunchy.<\/li><li><strong>Poudre \u00e0 lever<\/strong>. To help the biscotti become fluffy.<\/li><li><strong>Sel<\/strong>. Just a pinch!<\/li><li><strong>Chopped<\/strong> <strong>Pistachios<\/strong>. I like lightly chopping the pistachios so there are still larger chunks in these biscotti.<\/li><li><strong>Organic cane sugar<\/strong>.\u00a0This will be used to top the cookie logs before baking.<\/li><li><strong>Semi-Sweet Chocolate Chips + Coconut Oil<\/strong>. To melt and drizzle over the biscotti.<\/li><li class=\"ingredient contains-gluten contains-grain contains-aip contains-fodmap contains-gaps contains-keto contains-paleo contains-scd\">\u00a0<\/li><\/ul><div id=\"process_wrapper\" class=\"process_wrapper\"><div id=\"process_wrapper\" class=\"process_wrapper\"><h3>Processus<\/h3><ol class=\"instructions\"><li id=\"wprm-recipe-2420-step-0-0\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Preheat oven to 350\u00baF.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-1\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Line a large baking tray with parchment paper or a silicone baking mat and set aside.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-2\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">In a small bowl, make your flax egg by combining 2 tbsp ground flax seeds and 6 tbsp warm water. Let sit for 5 minutes.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-3\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">In a large mixing bowl, add in flax eggs and remaining wet ingredients and whisk well.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-4\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Add in all dry ingredients except pistachios and mix well until all ingredients are combined.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-5\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Fold in chopped pistachios and mix until well incorporated into the dough.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-6\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Using a spatula, separate your dough in half in your mixing bowl. Lightly oil your hands with olive oil and scoop out half the dough onto your baking tray. Form a cookie log with the dough, about 4.5 inches wide and do not press down too much. Try to create a rounded top with the biscotti log. Repeat for the other half of dough.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-7\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Brush your two cookie logs with olive oil and sprinkle a generous amount of cane sugar on top.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-8\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Bake for 40 minutes and let cool for about 10-15 minutes, or until they are completely cooled and ready to be cut.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-9\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Slice your biscotti with a chef\u2019s knife on a cutting board, then place back on your baking tray on one side and bake at 275\u00baF for 10 minutes. Remove from oven, flip biscotti on the other side and bake for another 10 minutes or until golden brown.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-10\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Melt the chocolate in the microwave with the coconut oil in 25-30 second increments until fully melted.<\/div><\/li><li id=\"wprm-recipe-2420-step-0-11\" class=\"wprm-recipe-instruction\"><div class=\"wprm-recipe-instruction-text\">Drizzle the melted chocolate on top of your biscotti.
