Recipe: Mediterranean Zoë Thyme Chicken with Lemon & Olive Oil
Ingredients (serves 2–4):
- 4 chicken thighs or breasts
- 3 tbsp Zoë Extra Virgin Olive Oil
- 1½ tsp Zoë Greek Dried Thyme
- 2 garlic cloves, minced
- Juice of 1 lemon + zest
- ½ tsp sea salt
- ¼ tsp black pepper
- Optional: ½ tsp chili flakes for a touch of heat
- Fresh parsley for garnish
Instructions:
- Preheat oven to 200°C (400°F).
- In a small bowl, mix olive oil, Zoë Greek Dried Thyme, garlic, lemon juice and zest, salt, pepper, and optional chili.
- Rub the mixture all over the chicken, making sure to coat evenly.
- Place chicken on a baking tray lined with parchment paper.
- Roast for 25–30 minutes (depending on size) until chicken is golden and cooked through.
- Remove from oven and let rest 5 minutes. Garnish with fresh parsley and a drizzle of extra olive oil before serving.
Serving Suggestion: Serve with roasted vegetables, Greek lemon potatoes, or a simple Mediterranean salad.
