Olive Oil Sweet Potato Cake (One Bowl Recipe)

First of all, sweet potato in cake is GENIUS. Secondly, using olive oil to enhance the cake flavour is WOW! And lastly, who doesn’t love a ONE BOWL recipe?! This recipe is probably my fave that I’ve done so far. This cake fills you up nicely and you feel less guilty because a veggie = health and health is wealth!

Serves: 10

Ingredients

1 1/2 cups Sweet Potato, (cooked and mashed)
1 cup Pure Maple Syrup
1/4 cup Coconut Sugar, (or regular white sugar)
3 whole Eggs
1 1/2 cup Almond Flour
1 cup All Purpose Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 Tbsp Vanilla Extract

1. Process
  1. In a large bowl mix together your olive oil, sweet potato, maple syrup, coconut sugar, eggs and vanilla
  2. Add in your almond flour, all-purpose flour, baking soda, baking powder and salt – mix again
  3. Oil and coat a 9inch cake pan
  4. Dump mixture into cake pan
  5. Bake for 50 minutes (the cake will be done when a toothpick comes out dry)
  6. Once baked, allow to cool and come to room temperature
  7. Top off with optional powdered sugar for topping
  8. Slice and serve!
Notes
Freezes well too so if the cake is too much for you to eat in a few days, I recommend freezing it!! Allowing it to thaw overnight in the fridge before serving it again.
