With the holidays right around the corner, there’s one cookie that I’ve been missing lately. These are my olive oil molasses cookies. Made with just a handful of ingredients you probably already have in your pantry.

Ingredients
- 2 cups All Purpose Flour
- 1/2 tsp Cloves, Ground
- 1/2 tsp Ginger, Ground
- 2 tsp Cinnamon, Ground
- 1/2 tsp Kosher Salt
- 3/4 cup Extra Virgin Olive Oil,
- 1 cup Granulated White Sugar
- 1/4 cup Molasses
- 1 whole Egg
- 1/2 cup Turbinado Sugar, (to roll the cookies, optional)
Process
- Whisk the dry ingredients together; all-purpose flour, ground cloves, ground ginger, cinnamon, and salt, set aside
- Mix the wet ingredients with an electric mixer in another bowl; vegetable oil and granulated sugar until combined
- Add in the molasses and egg, mix again
- Combine the dry to the wet ingredients by an electric mixer at first in a few batches and fold the rest of the flour with a spatula, do not over mix
- Chill the dough for 2 hours, and cover the mixing bowl with plastic wrap
- Preheat oven to 375F
- Once chill time is up, roll the molasses cookie dough into 1-inch balls, then roll in a small bowl of turbinado sugar
- Place cookies on a parchment paper lined baking sheet
- Bakes in the oven for about 8 to 10 minutes (until cookies begin to crack)
- Cookies should cool for at least 5 minutes on the baking sheet
- You can then transfer them to an airtight container once cooled
Notes
Super addictive! Feel free to cut down the sugar by 1/2 cup if desired to be less sweet (: You can also swap the olive oil for regular vegtable oil!
