Zoë Olive Oil Molasses Cookies

With the holidays right around the corner, there’s one cookie that I’ve been missing lately. These are my olive oil molasses cookies. Made with just a handful of ingredients you probably already have in your pantry.

Ingredients

  • 2 cups All Purpose Flour
  • 1/2 tsp Cloves, Ground
  • 1/2 tsp Ginger, Ground
  • 2 tsp Cinnamon, Ground
  • 1/2 tsp Kosher Salt
  • 3/4 cup Extra Virgin Olive Oil
  • 1 cup Granulated White Sugar
  • 1/4 cup Molasses
  • 1 whole Egg
  • 1/2 cup Turbinado Sugar, (to roll the cookies, optional)

Process

  1. Whisk the dry ingredients together; all-purpose flour, ground cloves, ground ginger, cinnamon, and salt, set aside
  2. Mix the wet ingredients with an electric mixer in another bowl; vegetable oil and granulated sugar until combined
  3. Add in the molasses and egg, mix again
  4. Combine the dry to the wet ingredients by an electric mixer at first in a few batches and fold the rest of the flour with a spatula, do not over mix
  5. Chill the dough for 2 hours, and cover the mixing bowl with plastic wrap
  6. Preheat oven to 375F
  7. Once chill time is up, roll the molasses cookie dough into 1-inch balls, then roll in a small bowl of turbinado sugar
  8. Place cookies on a parchment paper lined baking sheet
  9. Bakes in the oven for about 8 to 10 minutes (until cookies begin to crack)
  10. Cookies should cool for at least 5 minutes on the baking sheet
  11. You can then transfer them to an airtight container once cooled

Notes

Super addictive! Feel free to cut down the sugar by 1/2 cup if desired to be less sweet (: You can also swap the olive oil for regular vegtable oil!
