Recipe Idea:

Greek Lemon Oregano Roasted Vegetables 

This easy Greek-inspired recipe highlights the fresh, herbal flavor of Zoë Greek Oregano Infused Extra Virgin Olive Oil. It works perfectly as a side dish or a light meal. 

Ingredients 

• 3 cups mixed vegetables (potatoes, zucchini, bell peppers, red onion) 

• 3 tablespoons Zoë Greek Oregano Infused Extra Virgin Olive Oil 

• Juice and zest of 1 lemon 

• 2 cloves garlic, minced 

• Salt and black pepper, to taste 

• Optional: crumbled feta cheese for serving 

Instructions 

1. Preheat your oven to 400°F (200°C). 

1. Place all vegetables in a large bowl. 

1. Add the olive oil, lemon juice, lemon zest, garlic, salt, and pepper. 

1. Toss well so the vegetables are evenly coated. 

1. Spread the vegetables in a single layer on a baking sheet. 

1. Roast for 30–35 minutes, turning once, until tender and lightly golden. 

1. Drizzle with a little extra olive oil and add feta if desired before serving.
