Greek Lemon Oregano Roasted Vegetables
This easy Greek-inspired recipe highlights the fresh, herbal flavor of Zoë Greek Oregano Infused Extra Virgin Olive Oil. It works perfectly as a side dish or a light meal.
Ingredients
- 3 cups mixed vegetables (potatoes, zucchini, bell peppers, red onion)
- 3 tablespoons Zoë Greek Oregano Infused Extra Virgin Olive Oil
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- Optional: crumbled feta cheese for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Place all vegetables in a large bowl.
- Add the olive oil, lemon juice, lemon zest, garlic, salt, and pepper.
- Toss well so the vegetables are evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 30–35 minutes, turning once, until tender and lightly golden.
