This dessert is SUPER easy, and the best part, it’s 3 ingredients total. Perfect for an unexpected guest or dinner party sweet treat surprise. We’re using a bit of a cheat code with this one, an oatmeal cookie box mix. Elevated with a fabulous Fig and Ginger Chutney from Zoë Olive Oil.

  4. Using a tsp cookie scooper, scoop dough balls onto baking sheet and with hands, form a more circular shape
  5. Using your thumb, press into the middle of each cookie
  6. Add 1/2 tsp of filling to each thumbprint
  7. Bake for approx 10 minutes or until edges seem golden
  8. Remove from oven and move onto a wire wrack to cool, repeat for the remaining dough

Notes

Store on the counter in an airtight container and use as snacks for the week! These also freeze really well too! Depending on size of cookie, this recipe can make approx 30 to 33 cookies.
